The smell of roasting Hatch green chiles!!!!!!

Pure nirvana! Roasted up a 30 lb bag of Hatch green chiles last weekend and I'm getting another 30 lb bag of Hatch green chiles roasted today. Absolutely my favorite thing about August.

Mostly I use them on quesadillas, pico de gallo, and green chile stew.

Heads up - the Hatch burger / dog at Freddy's is almost done

I had one of those Freddy's Hatch burgers earlier this summer. Tasty. I'm sure home roasted ones would be even better.
