Gerald Wyman opened his establishment in 2005 and immediately entered a few of his brews at The Great American Beer Festival and won a Silver Medal for his Oatmeal Stout. He has now accumulated 9 medals (5 Gold) at the GABF, one at the World World Beer Cup, and in 2013, the brewery and Gerald were named by the GABF as the Small Brewpub and Small Brewpub Brewer of the Year.

I have to second the recommendation for Gella's Diner/Lb Brewing in Hays. It is a great combination of excellent beer and really tasty food. I wish they would expand to Wichita. Pretty sure they do not bottle although I always try to bring a couple growlers back to Wichita. The Oatmeal Stout is great and I also like the Amber. I'm not much of a hops fan so I can't really speak to their IPA.

Jester King is another very popular brewery in Austin that does farmhouse style ales. They recently switched to using wild strains of yeast for all their beers. One of their beers that I really enjoyed is Noble King, but I haven't had it since they switched the yeast.

I have had the H&G offerings, they are very good. Jester King is on the to-do list for our Memorial weekend trip to Austin. I'm gonna guess that you are aware of shaggybevo.com, they have a couple of beer threads that have lead me to some good beers that I wouldn't have found otherwise.One quick note before we present the rankings: With Wichita State’s move to the American Athletic Conference, the Shockers have moved out of the mid-major club. It's a good site for a lot more than UT sports. I stay away from the football forum but the volume of posters makes the basketball and baseball forums pretty lively during the season. The music forum and travel/food forum are outstanding. I don't troll so they have treated me pretty well. Shocker basketball gets a lot of love there but Shocker baseball not so much.
